Storing Fresh Herbs

growing_basil.gifI’ve been buying alot of fresh herbs lately for cooking (the herbs haven’t been going so well on my balcony) and searched for some tips on storing them in this hot, humid climate of Brisbane. Here’s what it boils down to:

1. Wash the herbs in cold water, trim off dead leaves and dead stems and pat them dry
2. Place the stems in a small container of water, don’t submerge the leaves

3. The cover lightly with a plastic bag or plastic wrap making sure there is a small amount of air that can get through

4. Refrigerate and change the water every day or so. You can use the old water watering your other plants

    If you want to keep herbs on your balcony, you will need to do this.
    Get waterwell pots and make sure they have lots of dirt, that is don’t make the pots too small. Mulch them, it helps keep the water in and provides fertilizer. Check the type of soul you are using, some require quick draining or they will rot, mostly slow growers like rosemary. They may be suffering from too much sun and wind too, give them a little shelter.
    Should work a treat. Be careful of fertilizers too, after all you are going to eat them.
    You can also always dry your herbs. Put them in a paper bag (leaves only) and hang it, that is about all you need to do. When they are really dry put them in a jar out of light. Works well for Basil, oregano, marjoram, all mints, rosemany, lavender, thyme but can be a bid dodgy for parsely.
